Sancerre Rouge Cuvée Raymond

Sancerre is situated on the left bank of the Loire River in the Cher administrative department. The Sancerre appellation totals 2700 hectares (6670 acres). The vineyards of Domaine Tabordet grow in the communities of Verdigny, Sury-en-Vaux and Sancerre. This cuvee is produced from a 40 year-old parcel of vines planted in our village of Verdigny.

Grape variety :100% Pinot noir.
Pruning :Single Guyot.
Vintage :15 September to 15 October.
Soil :Limestone-clay.
Vinification :The grapes for Cuvée Raymond are manually sorted upon harvest. After about 20 days of vatting time, they are then pressed and the juice placed in 1 – 3 year-old oak barrels. Malolactic fermentation occurs naturally, usually in August. The different barrels are then racked and blended together and the wine rests in vats for about 2 additional months before bottling (without filtering or fining). On the market: Offered for sale usually 2 years later.
Alcoholic content :12.5° – 13.5°.
Sugar :< 1 g/l.
Acidity :average 3 g/l.
With food :Cuvée Raymond is a perfect partner for red meats and soft cheeses.
