Pouilly-Fumé


The ” appellation ” Pouilly Fumé is on the right bank of the Loire, in the department of the Nièvre. Its territory consists of a solid promontory which forces the river (the Loire) to change its course in a North-easterly direction.

The appellation Pouilly Fumé covers 1200 hectares.

The vineyard of the Tabordet winery is planted in the commune of Saint-Laurent l’Abbaye.

Grape variety :Sauvignon 100%.
Pruning :Guyot simple.
Vintage :End of September-beginning of October. Harvesting by machine.
Soil :Kimmeridgian calcareous marls and argiles à silex
Vinification :Pneumatic pressing. Musts lightly clarified. Slow fermentation in thermostically controlled stainless-steel vats. No malolactic fermentation. Available for sale from March onwards.
Alcoholic content :12.5 / 13°.
Sugar :< 2 g/l.
Acidity :5 g/l on average.
With food :Excellent alone as apéritif or with sea food, and with a few years of age may well accompany foie gras
